This is the one I had at the potluck the other day. Here is the recipe for those of you who asked.
Devils food cake. Cherry edition.
2oz cocoa powder
3/4 cups brown sugar
1 1/3 cup gluten free mix
3/4 tsp salt
1 1/2 gf baking powder
1/2 tsp baking soda
10 TBSP butter
1/2 cup granulated sugar
3 large eggs
1 tsp vanilla extract
1 1/2 tsp xantham gum.
1 can cherry pie filling
Preheat oven 350 degrees.
Put cocoa and brown sugar in heatproof bowl. Pour in 1 cup boiling water. Mix well and leave to cool.
In separate bowl mix together flour, baking powder and baking soda. Cream together the butter and granulated sugar with mixer. Add eggs. Mix.
Add half the flour mixture and half the chocolate mixture and mix well. Add remaining flour and chocolate mixture. Add 1 1/2 tsp xantham gum. Mix briefly.
Grease 9x13 baking sheet. Dump half of batter into pan. Scoop cherry pie filling onto cake batter. Cover with remaining batter.
Bake for 30-40 minutes. Let cool.
Add chocolate buttercream icing. Enjoy
