Gf Corn muffins
1 cup GF flour mix
1 cup cornmeal
1/4 cup cornstarch
1 Tbsp GF baking powder
1/2 tsp baking soda
1 1/2 tsp xantham gum
1/2 tsp salt
2 eggs
1 1/4 milk with 1tbsp vinager
1/3 cup honey
1/4 cup oil
1/2 cup frozen or drained can corn kernels
In large bowl combine dry ingredients. In another bowl beat eggs, milk, honey and oil. Mix the wet ingredients into the dry ingredients. Stir in corn kernels.
Spoon batter into greased 9 x9 cake pan or into 12 muffin cups. Let stand for 30 minutes. ( I have no idea why but if I am in a hurry I skip that step)
Bake for 15-20 minutes. Remove from pan and let cool on wire rack.
