This is our staple muffin. It's from a taste of home magazine but I have changed it to have less fat and be gluten free. Yummy. I am a sucker for anything pumpkin.
Chocolate chip pumpkin muffins
3 cups gf flour mix
2 teaspoons ground cinamon
1 teaspoon salt
1 teaspoon baking soda
4 eggs
2 cups sugar
2 cups canned pumpkin
1 cup plain applesauce
1/2 cup oil
1 cup gf chocolate chips. (Enjoy life brand is yummy)
Added last.
1 and 1/2 tsp xantham gum
In a bowl mix flour, cinamon, salt and baking soda
In a different bowl mix eggs, sugar, pumpkin, applesauce and oil
Stir in dry ingredients into wet ingredients. Mix until well mixed. Mix and fold in xantham gum and chocolate chips. (I leave the xantham gum to last because if you over mix the xantham gum, your baking gets extra gummy.which doesn't taste good.)
Scoop into greased muffin tins. Bake at 350 for about 15-20 minutes
