My all purpose gluten free flour replacement mix was given to me by Daniel's aunt Eileen. Who has been cooking and baking gluten free for years. She has tried many kinds of flour and this is what she has gone with for optimum health benefits. Thanks Eileen!
Get a container that will hold at least about 12 cups of flour in it. Mix in the following.
6 cups brown (or white) rice flour
1 cup potato starch (not flour)
1 cup tapioca flour
You can boost the health value of your baking by adding these as well.
1 cup quinoa flour (optional)
1 cup ground flax seeds (optional)
1 cup chia seeds (optional)
That's it! So when i refer to GF Flour Mix, this is what i am talking about. That is the mix I use for 80%of my baking. It's one that is versatile. Then just add xantham gum according to what you are baking. The xantham gun is what is honing to bind your food together and make it less crumbly.
