No bake energy bites
1 cup gf oats
2/3 cup of coconut flakes
1/2 cup peanut butter
1/2 cup ground flaxseed
1/2 cup chocolate chips (optional)
1/3 cup honey or maple syrup
1TBSP chia seeds (optional)
1tsp vanilla extract
Mix all ingredients together until well combined. Refrigerate for 30 min. Once chilled roll into balls. 1 inch in diameter. Store in airtight container in the fridge for up to 1 week.
